160 g strawberriesÂ
35 g fine beet sugar Â
1 tbsp waterÂ
235 g cream cheese, at room temperatureÂ
1 tsp vanilla extractÂ
50 g Tiense icing sugarÂ
200 ml whole milkÂ
300 ml full creamÂ
3 digestive biscuits (or other dry biscuits such as speculoos)Â

Wash the strawberries, remove the crowns and cut into small pieces. Put the strawberries, Fine Beet Sugar and water in a pan. Bring to the boil and simmer gently for 7 minutes. Let cool and put the mixture in the fridge until the ice cream is assembled.
Beat the cream cheese until the mixture is smooth with no lumps. Add the Tiense Flour sugar and vanilla extract and mix until smooth. Add the milk and cream and mix well. Let the mixture cool in the fridge for at least 2 hours.
Start the IM 1252 Ice Cream Maker and pour in the ice cream mixture while the machine is running. Let the machine run until the programme stops.
Put half of the ice cream in a cake tin. Add half the strawberry sauce and crumble half the biscuits on top. Pour the rest of the ice cream on top and add another layer of strawberry sauce and crumbled biscuits.
Place the cake tin in the freezer for 4 hours. Serve in bowls or cones and enjoy!
