Green pesto

4 portions


4 cloves of garlic, divided in 4
20 fresh basil leaves
100 gm freshly grated Parmesan
30 gm roasted pine nuts
1,5 dl of olive oil


Put the garlic, basil leaves and pine nuts in the measuring cup, put the hand blender on top and puree. You can also blend the ingredients in het High Speed Blender.
Add the Parmesan and mix it in.
Add the olive oil in a fine jet while you keep mixing.
Mix until the sauce is nice and smooth.
Use immediately, or cover with plastic wrap and store in the refrigerator


Storage tip: apply a thin layer of olive oil on top of the pesto before covering it and placing it in the fridge. The oil ensures that the air can not reach the top layer of your sauce, so it will retain its beautiful green color for a longer period of time.
